Wir suchen einen Assistant Director of Food & Beverage für unser Pre-Opening Team im Mandarin Oriental, Vienna.

Das Mandarin Oriental, Wien wird in einem denkmalgeschützten Gebäude untergebracht und über 151 Gästezimmer und Suiten verfügen, die sich um einen Innenhof im Zentrum des Anwesens gruppieren. Es wird ein Restaurant, eine Bar und einen Außenbereich mit Garten umfassen. Darüber hinaus wird das Anwesen ein Spa im Mandarin Oriental bieten, das mehrere Behandlungsräume, einen Swimmingpool und ein gut ausgestattetes Fitnesscenter umfasst. Für Veranstaltungen und gesellschaftliche Anlässe stehen zudem verschiedene flexibel gestaltbare Bankett- und Tagungsräume zur Verfügung.

Die 17 Residenzen im Mandarin Oriental werden sich in den beiden obersten Stockwerken des Gebäudes befinden und über einen privaten Zugang zum Dach verfügen. Mehrere der Apartments bieten Außen-Terrassen und atemberaubende Ausblicke über die Stadt. Diese gehören zu den exklusivsten Wohnungen der Stadt, wobei die Eigentümer den legendären Service des Mandarin Oriental und den direkten Zugang zu den Hoteleinrichtungen genießen werden.

Mandarin Oriental, Vienna will be housed in a heritage building and comprise 151 guestrooms and suites surrounding a courtyard in the centre of the property, incorporating a restaurant, bar and outdoor garden. The property will also house a Spa at Mandarin Oriental featuring a series of treatment rooms, a swimming pool and a well-equipped fitness centre. A range of adaptable banqueting and meeting spaces will be available for events and social occasions.

The 17 Residences at Mandarin Oriental will be located on the top two floors of the building and will have private access to the roof, with several of the apartments offering outdoor terraces and stunning citywide views. These will be some of the most exclusive apartments in the city, with owners enjoying Mandarin Oriental's legendary service and direct access to the hotel's facilities.

Aufgaben Als Assistant Director of Food Beverage werden Sie verantwortlich für folgende Aufgaben sein:

• Überwachung des täglichen Betriebs der F&B-Abteilung
• Unterstützung des Director of F&B bei der laufenden Kontrolle und Analyse folgender Bereiche:
  • Gästezufriedenheit
  • Vermarktung
  • Einnahmen und Betriebskosten
  • Sauberkeit und Hygiene
• Wöchentliche Inspektionen von Küchen und Restaurants mit Berichtserstellung
• Erstellung und Kontrolle von Wein- und Getränkekarten
• Tägliche Hotelbesichtigungen, um betriebliche Standards und Herausforderungen zu beobachten und deren Nachverfolgung mit den zuständigen Managern
• Sicherstellung, dass die monatliche Bestandsanpassung aller Betriebsmittel in allen Verkaufsstellen aktualisiert wird
• Vertretung des Director of F&B in seiner Abwesenheit
• Vom Director of F&B zugewiesene Aufgaben und Sonderprojekte
• Planung in Zusammenarbeit mit dem Director of F&B und den Abteilungsleiter von Werbeaktionen und Menüs gemäss dem jährlichen Marketingplan

• Sicherstellung, dass alle festgelegten Aktionspunkte, täglichen Briefings oder zweimonatlichen Betriebstreffen von den betroffenen Personen befolgt werden
• Verantwortlichkeiten, unter Anleitung des Director of F&B, wie die Einstellung bestimmter Mitarbeiterebenen, Mitarbeiterorientierung, Leistungsbeurteilung, Coaching, um eine angemessene Personalausstattung und Produktivität sicherzustellen
• Sicherstellung, dass Schulungen für alle F&B-Mitarbeiter durchgeführt werden, um unsere legendären Servicestandards aufrechtzuerhalten oder zu verbessern und die H&S-Standards einzuhalten
• Erstellung von Arbeitsprognosen
• Unterstützung beim Strategieplan des Hotels, beim jährlichen Marketingplan, beim Zielprogramm und bei der Budgetierung für die F&B-Abteilung
• Aktualisierung des täglichen, wöchentlichen und monatlichen F&B-Berichts
• Bearbeitung von Kundenkommentaren und -beschwerden sowie deren Korrekturmaßnahmen nach Rücksprache mit dem Director of F&B und dem betroffenen Abteilungsleiter
• Einhaltung aller gesetzlichen Vorgaben, die den Betrieb betreffen, einschließlich Genehmigungsvorschriften, Gesundheitsvorschriften sowie Brand- und Sicherheitsvorschriften

As Assistant Director of Food & Beverage, you will be responsible for the following tasks:

• Overseeing the daily operations of the F&B department
• Assisting the Director of F&B with ongoing monitoring and analysis in the following areas:
  • Guest satisfaction
  • Marketing
  • Revenue and operating costs
  • Cleanliness and hygiene
• Conducting weekly inspections of kitchens and restaurants with report preparation
• Creating and managing wine and beverage menus
• Conducting daily hotel inspections to observe operational standards and challenges, and following up with the responsible managers
• Ensuring that the monthly stock adjustments of all operating materials in all outlets are updated
• Representing the Director of F&B in their absence
• Completing tasks and special projects assigned by the Director of F&B
• Planning promotions and menus in collaboration with the Director of F&B and department heads, according to the annual marketing plan
• Ensuring that all established action points, daily briefings, or bi-monthly operational meetings are followed by the relevant parties
• Handling responsibilities under the guidance of the Director of F&B, such as recruiting specific employee levels, staff orientation, performance evaluation, and coaching to ensure adequate staffing and productivity
• Ensuring that training is conducted for all F&B staff to maintain or improve our legendary service standards and comply with H&S standards
• Creating labor forecasts
• Supporting the hotel's strategy plan, annual marketing plan, target program, and budgeting for the F&B department
• Updating the daily, weekly, and monthly F&B report
• Handling guest comments and complaints, as well as corrective actions in consultation with the Director of F&B and the relevant department head
• Ensuring compliance with all legal requirements affecting operations, including licensing regulations, health regulations, as well as fire and safety regulations

Profil Als Assistant Director of Food & Beverage erwarten wir von Ihnen:

• Hotelerfahrung im Luxussegment in einer ähnlichen Rolle
• Hervorragende Kenntnisse aller Aspekte des F&B-Betriebs, einschliesslich Restaurant- und Barmangement, Bankett, In Room Dining, Küche und Stewarding

As Assistant Director of Food & Beverage, we expect from you:

• Experience in the luxury hotel sector in a similar role
• Excellent knowledge of all aspects of F&B operations, including restaurant and bar management, banquets, in-room dining, culinary, and stewarding
• Strong numerical skills and the ability to work comprehensively with spreadsheets and budgeting tools
• Experience in developing strategic business and/or food and beverage plans
• Experience in benchmarking activities
• Experience in preparing food and beverage budgets, analyzing profit and loss statements, as well as forecasts, and managing food and beverage promotions
• Excellent ability in forward planning and decision-making
• Experience in performance management and in working within a multicultural environment, as well as a people-oriented approach
• Good knowledge of Microsoft Office, including Word, Excel, and PowerPoint
